Spiced Roasted Cauliflower
Using one of my favourite vegetables, our spiced roasted cauliflower recipe is full of exotic flavour to be enjoyed by itself or alongside a roasted lamb. A perfect low carb recipe.
PREP TIME: 10 minutes
COOK TIME: 30 minutes
1 head of cauliflower, chopped or broken into smallish pieces
3 cloves of garlic, smashed with peel intact
3 spanish onions, peeled and sliced lengthways
1 1⁄2 tbp Wild for Life Healing Earth spice blend
Melted coconut oil
Squeeze of lemon juice
1 handful of dried red currants
1 bunch of fresh parsley
Himalayan crystal salt and cracked black pepper
Minted yogurt to serve
Preheat oven to 200°c. Line a large baking pan with baking paper.
Melt coconut oil, if solid and allow to cool slightly.
Thoroughly mix in Healing Earth spice blend to coconut oil.
Place cauliflower, onion and garlic into a large bowl, pour in coconut oil mix and toss to coat all vegetable. Spread the florets out into a single layer on the roasting pan.
Season well with salt and pepper.
Ensure oven has reached 200°c. Place the cauliflower in the hot oven, uncovered, for 25-30 minutes. Tops should be lightly browned.
Remove cauliflower from the oven, let cool and add currants and chopped parsley.
Squeeze over with lemon juice. Season again if desired. Toss and mix well, ensuring all flavours kiss each other.
Beautifully topped with minted coconut yoghurt. Yum!
