Our famous Paleo Festive Log is so perfect for anytime of year. Imagine eating something so delicious and having peace of mind whilst your devouring it. Completely grain free and pseudo grain free. I love this anytime slathered in vegan custard, or absolutely fabulous when it’s toasted with avocado on top. Darlings… you are welcome.
PREP TIME: 10 minutes
COOK TIME: 1.5 hours
2 cups Wild for Life Paleo Porridge
1 cup crushed cashews
1 cup crushed almonds
2/3 cup shredded coconut
1/2 cup melted Cacao butter
1/4 cup coconut oil melted
2 cups filtered water
100g red currants or chopped sultanas
1 tbsp Wild for Life Sweet Earth spice blend
1 tbsp cinnamon
1/3 cup honey or maple syrup or sweeten to your liking with Stevita stevia
2 pinches of salt
In a bowl mix all dry ingredients together.
Add water and mix well.
Add melted cacao butter and coconut oil, mix well
Mix in egg, then add maple syrup or honey. Combine together with love and good intentions.
Pour into a lined loaf tin. Note: this loaf is not meant to rise, so fill it to the top of an appropriate tin.
Bake in oven for 1.5 hrs at 170 deg Celsius.
Remove from oven, let it cool slightly before serving with your choice of cream, custard – Paleo or vegan versions are divine… and for you cheeky ones out there, pour a festive dose of brandy over the top before serving.
