Grilled Haloumi + Creamy Citrus Dressing
Delicious fennel and grilled Haloumi salad has a zingy citrus dressing to make you sing.
PREP TIME: 5 minutes
COOK TIME: 10 minutes
Organic haloumi 250g
1 fennel bulb, thinly sliced
50g / 4 tbsp grassfed butter
Coconut oil to cook
¼ cup heavy cream
1 tbsp Dijon mustard
1½ tbsp lemon juice
Salt & pepper
Wild for Life’s Ancient Earth Dukkah spice blend
Fennel sprigs to serve
Shave fennel bulb with a mandolin or finely slice with a super sharp knife. Keep the green sprigs.
Heat a little oil in a pan and gently soften the shaved fennel. Remove from pan and set aside.
Place ½ the butter together with the cream, garlic, mustard, lemon juice, salt and pepper into the pan. Simmer on low for 1 minute. Stir in until sauce is melted and smooth.
In a clean pan, heat the remaining butter and 1 tablespoon of oil on medium.
Place sliced haloumi in the heated pan for approx. 30 seconds each side –
wait until slightly golden.
Don’t over cook it darling, or else you’ll be chewing rubber.
Serve immediately, topped with fennel, drizzled with citrus dressing. Add a good pinch – 1 teaspoon of Ancient Earth over each plate and garnish with green fennel sprig. Deeeeeeeee-licious.
