Paleo Meatballs for Kids

Our Paleo meatballs are perfect lunchbox fillers. Not just for kids, but for all of us. Grain free, gluten free and so full of flavour. Super easy to make, perfect to freeze and will definitely become a favourite for all.

INGREDIENTS
500g grass fed beef or lamb mince
1 egg, beaten
2 garlic cloves, minced
1 tbsp melted coconut oil, extra for cooking
¼ cup freshly chopped parsley
2 tbsp. tomato paste
1 tbsp Wild for Life Spicy Earth spice blend
1 tsp dried mint or handful of finely chopped fresh mint
Himalayan Crystal Salt & black pepper
METHOD
In a bowl, combine all ingredients and season with salt and pepper to taste.
Mix and squish with your hands until everything is well combined.
Firmly roll the mixture into equally-sized meatballs – a little smaller than an average egg – you can use an ice cream scoop if easier.
Add 1 tbsp of coconut oil to a pan and cook on stovetop for 5-6 minutes until golden brown all over. I like them a little crispy on the outside so I cook them a ‘tad’ longer.
