Smoked Bacon & Cauliflower Soup
Warm your heart with the campfire flavours of our Smoked Bacon and Cauliflower Soup. Our Paleo recipe is rich in good healthy fats and wholesome organic spices to keep satisfied for longer.
PREP TIME: 5 minutes
COOK TIME: 2 hours
1 head of cauliflower, cut into florets
500g smoked bacon bones
2 leeks, roughly chopped
2 tbsp ghee
Filtered water or your choice of vege or beef broth
8 – 10 sage leaves, fresh
2 tsp Wild for Life Sweet Earth spice blend, for soup & sage
Gently fry the leeks in a tablespoon of ghee in a large deep soup pot for 2 minutes.
Add chopped cauliflower and bacon bones.
Add liquid – water or broth, to almost cover ingredients in pot and simmer on low for 1.5 hours.
Remove bones and shred meat off – set aside.
Blend cauliflower leek mixture and a teaspoon of Sweet Earth with a stick or vitamix blender.
In a small frypan, melt a tablespoon of ghee with a teaspoon of Sweet Earth spice blend.
Add sage to fry up in spiced ghee until almost crispy. Make sure spices cover the sage leaves.
To serve, pour soup into your favourite cups or bowls and add shredded bacon. Top with spiced sage and drizzle with a generous amount of extra melted ghee.
